It will be such a pity if you travel around Vietnam – an S-shaped country without paying a visit to Da Lat, one of the most popular tourist destinations, located at 1500 meters above sea level in the Southern part of the Central Highlands. Due to its unique climate, this city is well-known as “the City of Spring”. Da Lat not only appeals visitors by glorious flowers and poetic landscapes, but also by its special food, especially grilled pork rolls (nem nướng).
Grilled pork rolls are mostly served as an individual appetizer or snack, or sometimes as a main course with rice noodles or rice. When the weather turns cold in Da Lat, greasy and hot grilled pork rolls with the companion of spicy sauce are a brilliant choice to ward off the chill.
Making grilled pork rolls takes a lot of time for both ingredients preparing and cooking. Pork should be fresh and hygienic, combined with minced garlic, sugar, fish sauce and marinated for a short time. After that, the pork is rolled around a bamboo stick and then grilled on charcoal with constant temperature. To reduce the grease of the pork, the dish is usually served with crispy fried rice paper rolls, a combination of cucumber, carrot, white radish and purple onion pickles, as well as various vegetables.
The most crucial factor that makes Da Lat’s grilled pork rolls stand out from those of other places is dipping sauce. There are several different versions of the sauce, sometimes mixed with pig livers, shrimps, minced pork, roasted peanuts and ground bean paste, which contributes to create a perfect taste for the cuisine.
